The Recipe
Ingredients:
1 cup mixed beans (kidney beans, black beans, chickpeas), soaked overnight
2 tablespoons vegetable oil
1 large onion, finely chopped
2 tomatoes, pureed
1-inch ginger, minced
4 garlic cloves, minced
Salt to taste
Fresh cilantro, chopped (for garnish)
Instructions:
Prepare the Beans:
Drain and rinse the soaked beans. Cook them in a pressure cooker or large pot until tender. Set aside.
Prepare the Masala:
Heat the oil in a large pan over medium heat. Add mustard seeds and cumin seeds. When they begin to splutter, add the onions and sauté until golden brown.
Add ginger and garlic, and cook until the raw smell disappears.
Build the Flavor:
Stir in turmeric powder, coriander powder, and red chili powder. Cook for a minute.
Add the tomato puree and cook until the oil separates from the masala.
Combine and Simmer:
Add the cooked beans and their cooking water to the masala. Bring to a boil.
Reduce heat to a simmer. Add salt, garam masala, fenugreek seeds, asafoetida, and dried curry leaves. Let the curry simmer for about 20 minutes, allowing the flavors to meld together.
Final Touch:
Adjust seasoning if necessary. Garnish with fresh cilantro before serving.
